The Best Freezer Breakfast Burritos

How they came about:

I tried my hand in making freezer meals about a year or so ago. My favorite thing that I made: freezer breakfast burritos. They were a huge hit for my husband as well. He has to be at work at 4 am, so they are an awesome way to get a hot and healthy breakfast at 3 am. (I’m not so sure I want to wake up that early to cook for him!)

I made an egg scramble for breakfast one Saturday morning and thought, this would be an awesome breakfast burrito! So, the next time I made freezer breakfast burritos, I did just that. The result: The best breakfast burritos ever!

The Best Freezer Breakfast Burritos

What do you need?

1 can of Rotel (drained)

1 lb of breakfast sausage.

4 cups of cheese or so. (More or less depending on your cheese preference)

18 eggs

3 pkgs of burrito size tortillas (we use flour tortillas)

Milk (optional for scrambled eggs)

Salt and pepper.

Makes 20 burritos.

Let’s get to cooking…

Step 1: Brown Your Sausage.

The first thing you need to do is cook your breakfast sausage. Brown it in the skillet like you would ground beef. You want to make sure it has time to cool before you start assembling the burritos.

Step 2: Prep your eggs.

While the sausage is cooking, beat together your eggs. If you want, you can add a touch of milk for more fluffy eggs. Salt and pepper to taste. (My dad likes to use season salt in his eggs. It’s pretty good!)

Step 3: Add your eggs in the skillet.

After the sausage is completely browned, add eggs to the breakfast sausage in skillet.

Step 4: Add the rotel.

Add the can of Rotel and cook until eggs are done and fluffy.

Step 5: Let cool.

After the eggs are done, sit it to the side and let it cool.

Step 6: Assemble the Burritos.

When it has cooled off for about 5 minutes, start assembling your burritos. Put the mixture inside of the tortilla shell and top generously with cheese.

Step 6: Flash Freeze.

Flash freeze. (1hr)

Step 7: Wrap the Burritos & Place in Freezer Bags.

Wrap individually in clear wrap and place in freezer bags.

**Be sure to label the bags with the date you cooked them! We sometimes skip this because they are always eaten within a week or 2.
